this past sunday i carved a pumpkin.  before….

it looked pretty good…but now i have all these seeds.  what do i do?  toast them!

Toasted Pumpkin Seeds
seeds of one pumpkin
1 tbs – 1 tsp emeril’s essence (depening on the size and your taste)

preheat the oven to 250 degrees. then rinse and dry your pumpkin seeds.  next spray a baking sheet with pam and lay a single layer of seeds on top, and then spray with some more pam.  finally sprinkle with emeril’s essence and bake for 20 minutes.  tossing half way through.  and enjoy!

tips

  • emeril’s essence is a mixture of paprika, garlic, onion, and herbs.  if some other seasoning blend speaks to you use it.
  • it’s very important for the seeds to be in a single even layer on the baking sheets.  if they’re piled on top of each other they won’t toast evenly.
  • if you’re like me or my cousin we even add some extra salt.  by the time we’re through it’s as saltly as movie theatre popcorn…mmm.
