I had the most amazing jambalaya out at a restaurant a few weeks ago.  It was the perfect combination of sausage and shrimp with enough spice to warm me up on a cold winter’s day.  I just had to try and make my own recipe at home, here’s my attempt.

1 kielbasa, thinly sliced
1 onion, diced
2 celery, diced
1 red pepper, diced
2 garlic cloves, minced
1 tbs creole seasoning
2 fresh bay leaves
8 chicken tenders, chopped
3 tbs flour
4 c chicken stock
1 14.5 oz canned diced tomatoes

Heat olive oil in a large pot over medium high heat.  Add kielbasa, stirring frequently, cook till browned then set aside.  In the same pot add onion, celery, red pepper, garlic, creole seasoning and bay leaves, cook for 5 minutes.  Add chicken and cook for 4 minutes then add flour stirring to coat.  Add chicken stock, diced tomatoes, and kielbasa then bring to a boil.  Reduce to a simmer then cook for 30 minutes.
