Chocolate Cinnamon Banana Bread

DF, V, VG if using egg substitute

Nearly every time I have brown bananas I think it’s time to make banana bread.  Normally I make my standard recipe, chocolate chip banana bread, but this time I experimented a bit since I didn’t have all of the ingredients on hand.  This time it turned out just as chocolaty and equally delicious.

Chocolate Cinnamon Banana Bread
1 c flour
1/3 c cocoa powder
3/4 salt
1/2 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
6 tbs canola oil
2/3 c sugar
2 eggs
1 c mashed bananas (about 2)
2 tbs sliced almonds

Preheat to 350 degrees.  Mix the flour, cocoa powder, salt, baking soda, baking powder and cinnamon with a whisk, set aside.  In a large bowl mix the canola oil with the sugar then add the eggs one at a time until fully incorporated. Add flour mixture in thirds, mix until just combined.  Fold in bananas.  Prepare a loaf pan with non-stick cooking spray then pour in banana bread batter.  Top bread with slice almonds.  Bake for 50 to 60 minutes until toothpick comes out clean.
