This has been a go to recipe in family for years; when we’re not sure what to make we make this chicken. It’s great on the grill, in the oven or on the stove. If you go to the grocery store and chicken is on sale, buy a large amount in bulk. Then portion out the chicken with the marinade in resealable plastic bags, and freeze what you won’t use right away. That way when you take it out of the freezer, it’s already marinaded and can defrost in the frig in time for dinner! This recipe is a huge time saver which is always welcome for weeknight meals.
Pineapple Soy Chicken
1 c italian salad dressing
1 c pineapple juice
1/4 c soy sauce
1 lb boneless, skinless chicken breasts
In a resealable plastic bag pout in all of the ingredients and let marinade overnight. When ready to eat, preheat a grill pan and cook for 8-10 minutes. If cooking on the stove cook for the same amount of time. If cooking in the oven preheat the oven to 350 degrees then cook for 30-35 minutes.
