Homemade Granola


I love to eat granola over greek yogurt nearly every morning.  In the past I’ve used store bought, which isn’t half bad, but this week I choose to make my own.  Most of the ingredients were items I typically keep on hand like old fashioned oats, dried cranberries, raisins, honey and coconut oil. It was not only delicious, it was healthy perfect over greek yogurt or as an afternoon snack.

Homemade Granola
2 c old fashioned oats
1 c slivered almonds
1 c shredded coconut
1/2 c wheat germ
3 tbs coconut oil
2/3 c honey
1/4 c brown sugar
1 1/2 tsp vanilla extract
1/4 tsp salt
1/2 c dried cranberries
1/2 c golden raisins
1/2 c dried apricots, diced
1 1/2 tsp cinnamon

Preheat oven to 350 degrees. Combine the oats, almonds, shredded coconut, and wheat germ onto a large baking sheet and bake for 10 -12 minutes until lightly browned.  Transfer oat mixture to a large bowl. Reduce oven temperature to 300 degrees.  In a small sauce pan combine the coconut oil, honey, brown sugar, vanilla, and salt.  Place sauce pan over medium heat, bring to a boil and cook until sugar has dissolved.  Pour honey mixture over oats.  Add dried cranberries, raisins, apricots, cinnamon and stir to combine.  Pour mixture into a prepared 8 by 12 pan and press into place.  Bake for 25 – 30 minutes.  Let cool for 2 to 3 hours before handling.  Break up granola for a crumble or cut into bars.
