Balsamic Marinated Tomato Salad


With summer finally here it’s time for some great tomato recipes.  They don’t need much to shine, just a few seasonings to bring out the natural sweetness.  This salad is perfect as a dinner side or lunch entree, try it today.

Balsamic Marinated Tomato Salad
1 pint grape tomatoes, halved
1 shallot, chopped
1 garlic clove, minced
1/4 c balsamic vinegar
1/4 c olive oil
2 tbs basil, thinly chopped
4 c arugula
1/4 c pine nuts, toasted

Combine tomatoes, shallot, and garlic in a bowl.  Add balsamic vinegar, olive oil, and salt, stir to combine and set aside for 30 minutes.  In a large bowl add basil and arugula, top with tomato mixture, then sprinkle with pine nuts.
