Dill and Basil Potato Salad


When you think of summer barbecues one of first things to come to mind is potato salad.  I love how you can make it a thousand different ways, but at the end of the day it’s still one of my favorite comfort foods.  Since we grow basil at home I decided to switch up the regular potato salad by adding some and some dill, but that’s just because I love dill so much.  Give this one a try and tell me your favorite version of potato salad.

Dill and Basil Potato Salad
2 lbs yukon gold potatoes, chopped into 1 inch pieces
1/2 vidalia onion, chopped
1 c mayonnaise
1 1/2 tbs dijon mustard
1 tsp dried dill
1/2 c basil, chopped

Place potatoes in a large pot and fill with cold water and salt to taste.  Cover and place over high heat.  Bring to a boil then reduce heat to a simmer and cook for 15 minutes.  While potatoes are cooking mix mayonnaise, dijon mustard, dill, and basil in a large bowl. Drain water and place potatoes back into cooking vessel, let cool for 10 minutes.  Once cooler, but not cool add to bowl with dressing, mix to combine.  Let sit for a few hours to allow flavors to meld.
