Peach Basil Chicken


Peaches, peaches everywhere! Peaches can be found in abundance this time of year and while they are delicious on their own as a snack, why not use them to make dinner? Remember to store peaches at room temperature to keep flavor at its peak.

Peach Basil Chicken
4 chicken cutlets
1 garlic clove, minced
2 tsp ginger, minced
2 peaches, sliced
1/4 tsp red pepper flakes
1/4 tsp cinnamon
2 tbs white wine
1/2 c chicken broth
6 basil leaves, torn by hand

Preheat olive oil in a large skillet over medium high heat.  Season chicken cutlets with salt and pepper then cook for 3-4 minutes per side until cooked through, set aside and cover with foil to keep warm. Add garlic and ginger, cook for 1 minute.  Add peaches, red pepper flakes, cinnamon, and cook for 2 minutes. Turn heat to high and add wine wine, let reduce by half.  Add chicken broth, stirring to combine and let reduce by a third.  Turn off heat, add chicken back to the skillet, and add basil. Best served over rice to soak up the sauce.
