Knockwurst with Apple Sauerkraut Slaw

With the patriots playing the colts on sunday night football I knew I had to start the night off right with food like this.  Because this is what I call football food.  It’s hearty, warming, slightly bad for you, yet amazing in the end.  These can be made in doors as the recipe states, but the grill would be another great option.

Knockwurst with Apple Sauerkraut Slaw
4 knockwursts
1/2 granny smith apple, chopped
1/2 onion, diced
1/4 c sauerkraut
3/4 tsp parsley, chopped
1/4 tsp dried dill
4 hot dog buns, toasted
dijon mustard for topping

Add the knockwursts in a large skillet, fill with water until halfway up the knockwursts, about 1 cup, and 1 tbs of oil.  Place the skillet over high heat and bring to a simmer.  Cook uncovered until water has disappeared and knockwursts get crisp turning occasionally, about 15-20 minutes.

Meanwhile for the slaw, add apple, onion, sauerkraut, parsley, dill, and salt (to taste) to a bowl.  Mix until well combined.

Place the knockwursts in buns then top with dijon mustard and apple sauerkraut slaw.
