Chicken Orzo Soup


This is a take on chicken noodle soup, not quite the original yet delicious all the same.  If you like lemon, you will love this soup.  Yes it has lemon juice, but it also has other flavor notes that pair so perfectly like the dill and orzo.  For me this is also a recipe I can make just using what I keep on hand all the time.  I don’t have to rush out to the store when it’s too cold outside, I just start cooking and heating things up in my kitchen.


Chicken Orzo Soup
1 onion, chopped
4 celery sticks, chopped
4 carrots, chopped
2 garlic cloves, chopped
2 tsp rosemary, chopped
1/2 tsp dried dill
1lb chicken tenders, chopped
8 c chicken broth
1 1/2 c orzo
juice of one lemon
parsley for garnish

Heat olive oil in a large heavy pot over medium heat.  Add onion, celery, carrot, garlic, rosemary, and dill.  Cook until vegetables are soft, 5-8 minutes.  Add chicken and broth; season with salt and pepper.  Bring to a simmer, cover and cook, 15-20 minutes.  Add orzo and cook until al dente, 7-9 minutes.  Remove pot from heat.  Stir in lemon juice and parsley.
